Bourbon Vanilla is a generic term for Vanilla Planifolia beans, the vanilla we are most familiar with. It is very rich in the chemical compound vanillin and more than a hundred other organic compounds that contribute to its classic and unique flavor and buttery, creamy-chocolatey aroma. It is best used in baked goods, ice-cream and anything where a traditional vanilla flavor is desired. Specialty desserts such as pots de creme, creme brulee and panna-cotta deserve the special addition of whole bourbon vanilla beans to produce a truly rich flavor. This variety originated from Mexico and its cultivation in other tropical regions began in the 1700s. It is not in any way related to the Bourbon whiskey! In the 1800s, the French developed large vanilla plantations on the Island of Reunion and they renamed the island Isle de Bourbon, in honor of the French royal family. From then on, vanilla planifolia beans grown in the Indian Ocean region, with Madagascar being the largest producer is referred to as Bourbon Vanilla.

NOTE: Size does matter when it comes to buying vanilla beans. Although the quality and flavor of vanilla beans within the same grade is the same, longer beans contain a larger percentage of caviar (seeds pulp). A size super/premium bean(20cm+) may be equivalent to 2-3 shorts/regular gourmet beans. 500g vanilla beans may contain 100 to 150 beans depending on its size.
